Mi Yeok Mu Chim (Korean Seaweed Salad)

Ingredients:
  • 100 g fresh seaweed.
  • Cucumber cut 20 grams.
  • Cut 10 g onion.
  • Carrot, julienned 20 grams.
  • Red chili, finely sliced five grams.
  • Korean chili sauce, (Kochujiang), 1 ½ Tbsp.
  • Rice vinegar 1 Tbsp
    Dressing
  • Sugar 1 tbsp.
  • Sesame oil 1 tbsp.
  • 5 grams of roasted white sesame seeds.
  • Chili powder 1 tablespoon details.
  • Garlic, finely chopped 10 grams.
  • 5 g onion.

Ssam Jaang 쌈장 (A Korean Dipping Sauce)

Ingredients:
  • 1Tbsp of hot pepper paste (gochujang)
  • 2 Tbsp of soy bean paste (doenjang)
  • ½ Tbsp of sugar
  • 1 clove of minced garlic
  • 1 Tbsp of chopped green onion
  • 1 Tbsp of sesame oil
  • ½ Tbsp of toasted sesame seeds
Method:
  1. Mix all the ingredients together. It is ready to use immediately.
Note: If this blend is too spicy (hot) then adding more soybean paste and less pepper paste is a standard option. There really isn't any rule on this.

  • Red leaf lettuce
  • Ssamjang or as an alternate Gochujang
  • Peeled garlic
  • 4 stalks green onions
  • Rice
  • Side dishes
Method:
  1. Place the washed and separated lettuce leaves onto a plate.
  2. Peel garlic and bake or grill or use fresh if you dare.
  3. If you want, you can make a green onion "salad" slivering them thinly, then dressing them in a mix of soy sauce, rice vinegar, sesame oil, chillie powder and sesame seeds. Serve in a shallow bowl.

Kochu Jang 고추장 (Korean Chillie Paste)

This  is a fermentation associated process. Chillies are added to various carbohydrate substrates, (Rice powder and barley sprout malt) and inoculated with a mould with the Meju powder. The fermentation is allowed to proceed for a month in the warm (sun). Presumably salt is added to inhibit rogue cultures of bacteria into the mix.

  • 6 cups cooked rice
  • 10 sheets kim (seaweed sheet, nori)
  • 5 mini seafood sausage *
  • ¼ dan mu ji (pickled yellow radish, )

  • sesame oil to cover the surface of kim
  • sesame seed to garnish

Ohjing-oe Tuigim 오징어 튀김 (Fried squid)

Ingredients:   
  • 240 gm (8 oz) squid,
  • 240 ml (1 cup) flour,
  • 200 ml (6¾ fl oz) water
  • 1 tsp salt,
  • 1/2 tsp baking powder
  • oil to deep fry
Method:
  1. Prepare squid by removing the skin completely, (this is important as the skin will explode in the hot oil and spatter). Cut into circles
  2. Mix flour salt and baking powder.
  3. Add water, mix with a whisk quickly. (Don't over do it!)
  4. Salt and pepper squid and coat with flour, followed by a dip in the batter
  5. Fry until light gold color.
  6. Serve with Choganjang**.

  • 1-2 sheets fish cake, cut into bite size

  • ¼ cabbage, roughly chopped

A Korean sauce for raw fish

Ingredients:
  • 60 ml (1/4 cup) soybean paste,
  • 1 Tbsp Kochujang (Korean hot pepper paste),
  • 1 tsp of honey (or sugar),
  • 1-2 tsp rice wine vinegar,
  • 2+ cloves of minced garlic,
  • 2 stalks of chopped green onions,
  • 1 Tbsp of sesame oil,
Method:
  1. Mix all the ingredients together in a bowl.
  2. Dip the small pieces of fish fillet into the sauce and eat.

  • 1/2 (Romaine) Lettuce chopped or other

  • Pigs trotters
  • 1 onion halved
  • 1 large piece of ginger
  • sea salt
  • Garlic
Method:
  1. Remove any hair from the trotters by shaving or by searing with a blowlamp.
  2. Soaked them over-night in clean water refrigerated
  3. Rinse the trotters and place them in a pot with fresh water and blanch by boiling for 20 minutes.
  4. Wash the trotters again and return them to the pot with 2 Tbsp sea salt and top up with water.

  • 1 large or 2 small eggplants
  • Boiling water
  • 2 Tbsp Corn oil
  • 1 1/2 Tbsp Vinegar
  • 1 pn Sugar
  • 1/2 Garlic clove, crushed
  • 1 tsp Sesame oil
  • Few dashes Tabasco/cayenne (to taste)
  • 1 Tbsp Toasted sesame seeds*

  • 2 Tbs of soy sauce

  • 60 ml (1/4 cup) toasted sesame seeds
  • 3 garlic clove(s) minced (1 Tbsp)
  • 1 Tbsp ginger, minced
  • 3 scallions, minced
  • 80 ml (1/3 cup) soy sauce
  • 3 Tbsp sugar or honey
  • 1 1/2 Tbsp sesame oil
  • 1 tsp hot red pepper flakes
  • 1/2 tsp black pepper
Method:
  1. Lightly toast the sesame seeds in a dry skillet over medium heat.

Korean Broiled Pork

Ingredients:
     
1/2 c. soy sauce
3 tbsp. sugar
2 scallions chopped
2 cloves garlic, minced
1/2 tsp. freshly ground pepper
1 tbsp. sesame seeds
1/2 tsp. ground ginger
2 lbs. pork tenderloin
1 tbsp. peanut oil


Method:

Cut pork in 1/4-inch thick slices.
Combine first 7 ingredients and marinate the pork in the combination for at least 1 hour at room temperature.
Place on lightly oiled roiling pan and broil 5 minutes on each side, basting with the sauce.

4 tbsp. soy sauce
2 tbsp. sugar
1 tbsp. toasted sesame seeds, crushed
1 tbsp. toasted sesame oil
2 1/2 tbsp. chopped green onion

Combine all ingredients.
Form into 4 balls and flatten into patties.

1 lb. chuck roast cut paper thin slices
1 tbsp. crushed toasted sesame seed
1 tbsp. sesame oil
3/4 c. soy sauce
2 cloves of garlic, minced
Dash of pepper
3 tbsp. sugar
5 green onion tops (white parts) chopped


Method:

Put the meat in the freezer for about 30 minutes before slicing.
Place meat in a large bowl and sprinkle with sugar and press it by hand.

  • 1 teaspoon toasted sesame oil
  • 1/2 teaspoon minced garlic
  • 1 dash Korean red pepper powder (kochu garu) or other chillie powder (optional)

  • 240 ml (1 cup) of sugar
  • 360 ml (1 ½ cups) of soy sauce
  • 1 teaspoon black pepper
  • 2 tablespoons baked sesame seeds
  • 240 ml (1 cup) chopped green onion

FOR MEATBALLS


  • 500 ml (~2 cups) ground beef
  • 3 Tbsp soy sauce
  • 2 scallions, finely chopped
  • 3 garlic cloves, minced
  • 1 Tbsp sesame seed, toasted and crushed
  • 1/2 Tbsp sesame oil
  • fresh ground black pepper, to taste

Bajirak is a type of shellfish and found mostly in Korea, Japan, and China. Its English name is Manila Clam or Little-neck (short-neck) Clam, often used for making broth.  Kalguksu means hand made, knife cut noodles. It is a summer time meal.

1/4 an onion
4 stalks of garlic chives
1/4 a carrot (small)

Kongnamool moochim (Soy bean sprouts salad)

  • 250 m (~1/2 lb) soy bean sprouts*
  • 1tbsp soy sauce,
  • 30 ml (2 tbsp) sesame oil
  • 1 tbsp Korean chili powder
  • 2 tsp salt,
  • 1/2 tsp minced garlic
  • sesame seeds,
  • 240 ml (1 cup) water,
  • 1 tspn salt
    
(*bean sprouts are OK if you don't have soybean sprouts or if you prefer another.)

  • Pumpkin(s) (any pumpkin or squash should do. The Japanese pumpkin is the traditional squash used).
