  • 450 g (1 lb), dried or semi dried fruits like figs, paw paw, mango, apricots, apples, raisins a long strip of lemon rind and or any other preferred dried fruits.

Karivepillai Podi (Tamil Curry Leaf Masala)

Ingredients:
  • 2 Cups of Curry Leaves
  • 1 Cup of Toor Dal
  • 1 Cup of whole Urad Dal
  • 1 Tbsp of Pepper
  • 2 dried Chillies (variable)
  • 1 Tbsp of sea salt, Kosher or rock salt

Method:
  1. Wash and drain the curry leaves.
  2. In a single layer, place them in the direct sun for an hour or so. This is fairly important as the leaves tend to be sticky and difficult to homogenise if they are fresh. The sun will remove enough of the moisture for effective roasting and homogenising.

Mini Brandy Snaps

Ingredients
  • 50g (½ stick or 3½ Tbsp) butter, chopped
  • 1/3 cup (70g) brown sugar
  • 1/4 cup (60ml) golden syrup
  • 1/3 cup (50g) plain flour
  • a small amount of whipped cream to "plug" the ends of the snaps
Method
  1. Preheat oven to 180°C (356F) Line a tray with baking paper. Combine the butter, brown sugar and golden syrup in a saucepan and cook over medium heat, stirring, for 2-3 minutes or until butter melts and sugar dissolves. Set pan aside for 5 minutes to cool slightly.

Butterscotch Anise Mousse

The idea for this recipe came from 2 lines. I was reading Kate Zuckerman's recipe for Maple Syrup Anise Mousse and remembered a confection I used to enjoy called Liquorice Toffee made by Callard & Bowser.. It most definitely had the vanilla saltiness of the butterscotch flavour and the aniseed was unmistakable. The idea of a related mousse really intrigued me so here it is.

Ingredients:
  • 1 cup Coriander seeds
  • 1/2 cup Cummin seeds
  • 1 tbs Fennel seeds
  • 1 Cinnamon stick
  • 1 tsp whole Cloves
  • 1 tsp Cardamom seeds

  • 5-6 dried red Chillies (optional)

  • 1 tablespoon oil
  • ½ teaspoon mustard seeds

Ingredients:
  • 2 medium cloves garlic
  • 1/3 cup finely chopped onion
  • 1/2 cup dry red wine
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground cinnamon
  • Freshly ground black pepper to taste
  • 6 chicken pieces, skin removed
  • 1 1/2 tablespoons corn oil

  1. Homogenise ingredients in a processor or mortar and pestle
  2. Place chicken pieces in a single layer.

  • 3 tbsp Oil
  • 3 Cinnamon Sticks
  • A sprinkling of Cloves

  • 2 medium Onions

  • 3 tbsp chana dal
  • 2 tbsp urad dal
  • 2 tbsp toor dal
  • 2 tbsp coriander seeds

  • 25 Limes
  • 150 g (~5 1/4 oz) Sugar
  • 75 g (~2 1/2 oz) Salt
  • 60 ml (~2 cups.) Vinegar

Method:

  1. Pierce the limes using a fork.
  2. Mix vinegar, salt and sugar (preferably in a clay pot) and heat ona stove while stirring. 
  3. When mixture begins to boil, add the limes (including any juice left behind).

  • 180 ml (3/4 cup) THICK Coconut milk
  • 1 Tbsp Cooked white Rice

  • 2 cups flour (red rice flour and steamed flour mixed)
  • 1tsp salt
  • 300ml boiling water mixed with 50ml cold water

  • 1/4 teaspoon salt

  • 1 medium Onion, sliced
  • 2 fresh green Chilies, sliced
  • 2 cloves Garlic, crushed
  • 8 Curry leaves
  • 3 tbs Vegetable oil
  • 1/4 tsp ground turmeric

  • 1 Cup thick Coconut milk or fresh milk

Godhamba Roti (Srilankan Savoury Pancakes)

Ingredients:
  • 2 cups all purpose Flour
  • 1 tsp table salt
  • 1-2 cups warm water
  • Vegetable oil


Method:
  1. Mix the salt & flour well in a mixing bowl.
  2. Add 3-4 Tbs vegetable oil. Mix well.
  3. Add warm water gradually while mixing the flour to form dough that does not stick to the sides of the bowl.
  4. Knead the dough for a few minutes until soft.
  5. Make into four separate balls.
  6. Slightly flatten the balls and generously coat with vegetable oil, leaving it in the mixing bowl.
  7. Cover the bowl and let it stand for 4-5 hours.

Chili Sauce (Sri Lanka)

Ingredients:
 
  • 400 ml (14 oz) can Tomato sauce
  • 2.5 cm (1 inch) piece Ginger (crushed)
  • 4 cloves Garlic (crushed)
  • 1 tbs Chili powder (for HOT chili sauce increase upto 2 tbs)
  • 240 ml (1 cup) Sugar
  • 30 ml Vinegar
  • Salt to taste
