Ingredients:
  • 200 g shrimp
  • 200 g chicken meat
  • 4 tbsp tapioca starch
  • 1 tsp salt
  • 1/2 tbsp sugar
  • 1/4 tsp white pepper
  • Oil for deep-frying
Method:
  1. Shell and devein the prawns completely.
  2. Wash the prawns under running water and drain.
  3. Flatten the prawns using side of a cleaver and mince them lightly. Dice the chicken meat similarly.
  4. Mix minced prawns and chicken with the other ingredients in a bowl and combine well.
  5. Heat a wok or pan with cooking oil for deep-frying.
  6. Take one spoonful of chicken-prawn mix and shape it into a ball. Drop it into the hot oil and deep-fry till golden, about 3-5 minutes. Do the same with the rest of the mixture.
  7. Serve with a dipping sauce. eg: Thai Chicken Chillie Sauce; Tartare Sauce; Thousand Island Dressing

Prawn balls can be made similarly.
Reduce the starch to 3 Tbsp with the same amount of prawn meat.

Steamed Prawn balls are a perfect addition to soups with noodles. Steam for 8 to 10 minutes on a well oiled metal tiered steamer. Steamed Prawn Balls may be  frozen and simply dropped into the soup pot for a few minutes during the preparation of the soup.
