Ingredients :



1 cup Coconut (grated)  
2 Red Chillies(dry)
1 or 2 Fresh chillies    
1 tsp mustard seeds
2 tsp urad dal                    
1 small piece tamarind (dry)                
1 tsp sugar                       
pinch hing                       
1 tbsp oil                         
pinch salt                        (salt can be added when served)


Method :

Grate or blitz the Coconut meat in a food processor such that the meat is coarsely ground and definitely not a paste. . A relatively easy way to get at the meat is to place the coconut in the freezer for half an hour or so. Then with a hammer hit firmly holding the coconut in your other hand. The shell will crack away and leave the nut complete. Peel the nut and then grate the white meat. 

Roast the dal
In a pan heat the oil & add 1 tsp of urad dal. Fry for a minute.
Let it cool completely . 

Into a food processor or  mortar and pestle, add the tamarind, sugar, fresh chillies, coconut and 1 tsp of dal. Process it to a fine paste. Then add small amounts of water to produce a required consistency.

Prepare the seasoning with the remaining urad dal , mustard seeds, cumin seeds, dry chillies, hing in a tbsp of oil in a pan over moderate heat. Cook until the seeds sputter. 
Add the seasoning to the coconut paste.
