Ingredients:
  • 2 medium cloves garlic
  • 1/3 cup finely chopped onion
  • 1/2 cup dry red wine
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground cinnamon
  • Freshly ground black pepper to taste
  • 6 chicken pieces, skin removed
  • 1 1/2 tablespoons corn oil
Method:
  1. Homogenise ingredients in a processor or mortar and pestle
  2. Place chicken pieces in a single layer.
  3. Distribute the onion mixture evenly over the top of each piece.
  4. Stand for 2 hours in fridge.
