• 50g mashed durian fruit
  • 300ml dairy cream
  • 125ml fresh milk
  • 75g castor sugar
  • 2 eggs
  • 2 egg yolks

  1. Combine the homogenised durian, cream, milk and sugar in a saucepan. Use a wooden spoon and stir over  low heat until the mixture is warm. Remove the saucepan from the heat.
  2. Whisk the eggs and egg yolks together.
  3. Pour the beaten eggs gradually into the warm milk mixture with constant mixing.
  4. Reheat saucepan over very low heat. Keep stirring until the mixture starts to thicken.
  5. Pour the mixture into ramekins. Stand the ramekins in a shallow baking tray and add hot water to the tray to halfway up the sides of the ramekins.
  6. Bake in preheated oven at 170°C for 30-35 minutes.
  7. Remove the ramekins from the baking tray and leave to cool.
  8. Sprinkle sugar over the top of the set custard.
  9. Caramelise  under Grill for 2-3 minutes or flame with chef's torch until the sugar caramelises.
Serve immediately.
