Q.         What is the difference between shrimp and prawn?

A.         The primary difference is the gill structure. Shrimp have branching gills, while prawns have lameller gills with              a platelike structure. There are a few other distinguishing features. The front pincers of shrimp are typically                  the largest, while prawns have bigger second pincers. Prawns also have longer legs than shrimp. These                     differences may seem subtle, but they indicate different steps along the evolutionary path of both creatures.



Ingredients : 
  • 450 g (1lb)Fresh medium shrimps
  • 3 tablespoons Lime juice
  • 30 g (1 oz)  Flour
  • 2 tablespoons Olive oil
  • 1 Whole head of garlic, crushed & chopped
  • 1-2 Chilies, thinly sliced
  • 1 teaspoon Salt
Method :
  1. (Optional) Peel shrimps, remove the heads and tails and devein.
  2. Marinate in lime juice for 30 minutes.
  3. Sprinkle flour on shrimps and mix lightly.
  4. Heat olive oil in a wok. Saute garlic over low heat until lightly browned, about 5 minutes.
  5. Increase the flame to medium. Add shrimps. Stir fry for 1-2 minutes or until shrimps just show a pink colour.
  6. Add the chilies and salt. Heat through 1 more minute.Shrimp is most delicious when just cooked. {Fresh water shrimp require more cooking until the meat turns opaque. This is a safety consideration with the remote possibility of parasites. heating to this level will destroy such organisms. }
For a spicier taste, crush the chilies lightly before serving.
