Ingredients:
  • 300 gm (2/3 lb) precooked Chinese ham, cut into 24 slices, 8 cm (~3 in) wide
  • 110 gm (~4 oz) red dates
  • 1/2 loaf white bread, not sliced

  • 6 tablespoons rock sugar or granulated sugar
  • 2 tablespoons cooking wine or sherry or fermented rice wine
  • 1 teaspoon cornstarch
  • 1 tablespoon water

Method:
  1. Layer the sliced ham in a medium size bowl, pack tightly.
  2. Spread the dates on top of the slices of ham.
  3. Add the sugar and the wine and steam for 2 hours.
  4. Remove the bowl of slices ham and place a large plate over the bowl.
  5. Drain the liquid from the cooked ham into a measuring cup. Place aside.
  6. Invert the bowl on to the plate and remove the bowl.
  7. Bring the retained liquid to a boil, if liquid does not equal 1 cup, add water.
  8. Mix the cornstarch and the water and add it to the boiling liquid to thicken.
  9. Stir and pour over the sliced ham
  10. Cut off the crust from the bread; cut it into slices 1.5 cm (3/5 in) thick. Do not cut through the first slice; cut through the second slice (a pocket is formed).
  11. Continue cutting the entire loaf in this manner. Steam the slices of bread to soften them.
  12. Place the slices of ham between the slices of bread to serve as sandwiches.
