• 7 grm gelatin (1 packet) + 3 tbsp of water
  • 2 ½ cups full cream milk
  • ¼ cup sugar
  • 1 tsp vanilla
  • 2 Ripe Mango – 1 cut into small cubes or thin strips if firm enough.
  1. Mix the gelatin and water together and set it aside to soften.
  2. Put the milk and sugar in a saucepan, heat over medium low heat until bubbles form around the edges of the saucepan.
  3. Remove from heat and add in the vanilla and stir in the gelatin until dissolved.
  4. Pour the mixture into six ramekins or parfait glasses. Allow to cool a little.
  5. If you have long wedges of mango  you can add these into the glasses and refrigerate until set.
  6. Serve it with some Mango puree on top.
Note: (Vegan option)
  •             The milk may be replaced by the use of rich coconut milk.
  •             Agar may be substituted for gelatin
  •             Puree may be replaced by the addition of a mango mousse
