• 1 cup Coriander seeds
  • 1/2 cup Cummin seeds
  • 1 tbs Fennel seeds
  • 1 Cinnamon stick
  • 1 tsp whole Cloves
  • 1 tsp Cardamom seeds
  • 10-15 dried curry leaves
  • 5-6 dried red Chillies (optional)
  • 5-6 dried Pandan Leaf pieces
  • 1 tbs black pepper seeds
  • 2 tbs raw rice
  1. In a dry pan, over low heat, roast each ingredient separately.
  2. Stir constantly (Coriander, Cummin, Fennel and rice must be fairly brown but
  3. do not let them burn). 
  4. Mix all the roasted ingredients, put into a grinder and grind to a fine powder. 
  5. Store in an air tight jar.

  • This mixed ingredient like other masalas has a fairly short life which may be extended by storing the jar in the freezer.The max life in the freezer is probably 3 to 6 months. At room temp 10 days to four weeks.
  • Important to allow it to come to room temperature before opening.
