Ingredients:

  • 1 kg meaty spare ribs
  • 1 large onion (chopped)
  • 1 green capsicum (chopped)
  • 5 cloves garlic (chopped fine)
  • 2 tbsp ginger (chopped fine)
  • 2 tbsp salted black beans (chopped)
  • 1 fresh red chilli (chopped fine)
  • 1/4 cup light soy sauce
  • 1 tbsp dark soy sauce
  • 3 tbsp brown sugar
  • 1 1/2 cups water
  • 2 tbsp vegetable oil


Method:

  1. Cut the ribs into 4 cm pieces, place them in an ovenproof dish
  2. Sprinkle black beans, garlic, ginger and chilli
  3. Add light and dark soy sauce, sugar and water
  4. Cover dish in aluminium foil
  5. Bake in preheated moderate oven for 1 1/2 hour
  6. Alternatively, place in steamer and cook over water for 1 1/2 hour
  7. Remove and set aside
  8. Heat oil in wok
  9. Stir-fry onion and capsicum till soft
  10. Add pork ribs and juices, cook for 5 to 6 mins
Serve hot with rice
