Indonesian Risoles are a Portuguese heritage. Made simply with carrot and celery, potato, garlic and optional meat. A thin crepe is wrapped around the pre-cooked flavoursome filling, sealed and crumbed. The parcel is then deep-fried to bring out a crispy skin. This food lends itself ideally to an hors d’oeuvre because the filling is pre-cooked and the deep-frying time dependant only on the evolving colour.

Cristang Oxtail Stew.

Ingredients:
  • 2 kg (~4½ lbs) ox-tail
  • 2 large onions
  • 1 slice ginger
  • 7.5 cm (3 in) cinnamon stick
  • 14 cloves
  • ½  nutmeg
  • 1½ tsp salt
  • ¼ tsp pepper
  • 1 tsp vinegar
  • 2 large potatoes, peeled and cut into bite-sized cubes

  1. Place the meat in a large pot and cover with water. Bring to boil, and allow to boil for 10 minutes.

  • 1 tsp garlic, minced

This dish has emerged in most of the countries that had a Portuguese Eurasian evolved culture. The recipes vary the Cristang product, Smore,  being considered the most delectable . Cristang interpretation may even use beef tongue and tail as the meat ingredient having evolved from the original offal ingredients. The following recipe I think is from Indonesia.

Chillie Con Carne is seen as a Eurasian Cristang dish in KL. It is gaining popularity for a couple of recent developments: Fast food on a hamburger similar to a "Sloppy Joe"; and this is being sold by a popular and well known Cristang restaurant there.

  • 500 gm (~1 lb)  lean Beef, ground (minced)
  • 1x Egg
  • 60 ml (¼ cup) Dry bread crumbs
  • 60 ml (¼ cup) Water
  • 1 Tbsp Cornstarch
  • ½ tsp Salt
  • 1 tsp Sherry
  • 2 Tbsp Oil
  • 120 ml (½ cup) Water
  • 2 Tbsp Soy sauce

Shabu-shabu or syabu-syabu is a relatively new variant of hotpot.  It was introduced with the opening of a specialist restaurant for this dish called "Suehiro" in Osaka. (1955)

The name shabu-shabu  is due to the swishing sound that is made when the meat is pulled back and forth in the cooking broth. Vegetables accompany the cooked meat and they are also cooked in the pot. The cooked meat and vegetables are dipped in ponzu or "goma" (sesame seed) and served with steamed white rice.

Ingredients:

  • 45 ml (3 Tbsp) olive oil
  • 1 onion, chopped
  • 6 cloves garlic, minced
  • 5 green chillies, finely sliced
  • 2 g (1 tsp) fresh ginger - peeled, sliced, and ground into a paste
  • 3 cardamom pods
  • 2 whole cloves
  • 1 1/2 cinnamon sticks
  • 2 g (1 tsp) ground cumin
  • 2 g (1 tsp) ground coriander
  • 2 g (1 tsp) ground turmeric
  • 3 g (1 tsp) garlic powder or 4 mashed cloves of garlic

Ingredients:

  • 2250 gm (~5lbs) Short Ribs (thin cut)
  • 240 ml (1 cup) of sugar
  • 360 ml (1 ½ cups) of soy sauce
  • 1 teaspoon black pepper
  • 2 tablespoons baked sesame seeds
  • 240 ml (1 cup) chopped green onion
  • 120 ml (½ cup) chopped garlic
  • 1 teaspoon sesame oil
  • Cooked White Rice for Serving

   
Method:

Combine all ingredients and marinate short ribs for 2 + hours.
Place on a HOT bbq for about 3-4 minutes per side (to desired colour). Serve with white rice.

  • 60 ml (¼ cup) crushed toasted sesame seeds
  • 500 ml (~2 cups) bean sprouts
  • 1 tbsp. vegetable oil
  • 500 gm (~½ lb.) Ground beef
  • 250 gm (~½ lb.) Firm tofu, mashed
  • 1 tsp. minced garlic
  • 120 ml (½ cup) sliced green onion
  • 2 tbsp. soy sauce
  • 250 gm (~½ lb.) Wonton wrappers
  • 1400 ml (6 cups) beef broth

  • 500 ml (~2 cups) ground beef
  • 3 Tbsp soy sauce
  • 2 scallions, finely chopped
  • 3 garlic cloves, minced
  • 1 Tbsp sesame seed, toasted and crushed
  • 1/2 Tbsp sesame oil
  • fresh ground black pepper, to taste
  • all-purpose flour, for coating
  • 2 eggs, beaten
  • vegetable oil (for frying)


FOR SAUCE


  • 1 Tbsp soy sauce
  • 2 Tbsp rice vinegar

  • 1/2 Cup Olive Oil
  • 1 Pound Beef - cubed
  • 1 Large Onion - thinly sliced
  • 2 Teaspoons Salt
  • 1 Teaspoon Pepper
  • 2 Heads Lettuce - torn
  • 3 Large Roma Tomato - thinly sliced
  • 2 Medium Hard-Boiled Egg - thinly sliced
  • 4 Tablespoons Balsamic Vinegar
