This is a "rillette" style paste which differs from liver pate in that it is not a homogeneous paste. The meat fibre can be broken down to any density but because of the nature of the muscle tissue it will never reach that pate smoothness of liver. It is for this reason as well as the wonderful flavour that a paste of this texture is highly enjoyed.

Sugar cured salmon is a useful and delicious ingredient. barely used in Asian cuisine but could be easily adapted for many recipes old and new. The process of curing is very simple and is a safe procedure as everything is performed at refrigerated temperatures. As with any food the most important guarantee of success is fresh ingredients.

Duck Liver Pâté

Ingredients:
  • 600g duck livers
  • 250g  butter , diced and slightly softened
  • 2 shallots , finely sliced
  • 1 garlic clove , sliced
  • splash of brandy or port
  • 1 tbsp tomato purée
  • 100g butter
  • 1 tbsp thyme leaves
  • 1 tsp black peppercorns
  • toast, pickles and chutnies, to serve

  • 1 cup cider or palm wine vinegar
  • 3/4 cup vegetable oil
  • 2 tablespoons sugar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Tabasco or other hot chillie sauce

  • 3 marrowbones
  • 2 cloves garlic, finely chopped
  • 1/2 lb (or 2 large packages) soft, fresh cream cheese
  • 1 tube anchovy paste

Red Onion & Spiced Hummus

  • 2 tbsp olive oil
  • 1 red onion, thinly sliced
  • 1 tsp each cumin seeds and coriander seeds
  • ½ tsp fennel seeds
  • 1 x 400g can chickpeas, rinsed and drained
  • Juice ½ lemon
  • 1 tbsp tahini paste
  • 2 tsp finely chopped coriander
  • Pitta bread, to serve

Ingredients:
  • 1 mango
  • 1 red chilli
  • ½ red onion
  • handful coriander leaves
  • juice 1 lime
  • 2 tbsp sweet chilli sauce
  • 32 mini croustade cups.

Method:
  1. Mix the mango, red chilli, red onion and a handful coriander leaves, then mix with the lime juice and sweet chilli sauce. Season.
  2. Divide between 32 mini croustade cups  and serve within 1 hr so they'll be firm.

  • 2 spring onions, finely chopped
