Ingredients:
  • 500 gm (1 lb) pork kidneys, (trimmed)
  • 120 ml (1/2 cup) yellow onions
  • 120 ml (1/2 cup) zucchini
  • 120 ml (1/2 cup) celery
  • 120 ml (1/2 cup) carrots
  • 150 gm (~1/3 lb) pork steak
  • peanut oil
  • 2 cloves garlic, sliced thin
  • 1/2 teaspoon fresh-grated ginger
  • 2 tablespoons dry sherry
  • 2 tablespoons light soy sauce
  • 1/2 tablespoon cornstarch in 3 tablespoons water

  • 480 ml (2 cups) red lentils
  • 1440 ml (6 cups) water
  • 60 ml (1/4 cup) cilantro, chopped
  • 60 ml (¼ cup) Chinese celery, chopped
  • salt and pepper to taste

Garnishes:
  • 2 hot green chillies, finely sliced and soaked in white vinegar and pickled for a min of an hour.
  • 2 cups chopped sweet onions, cooked slowly in 1/3 cup peanut oil until dark and caramelised.

  • 120ml (4 oz or 1/2 cup) vodka

This is an excellent meat substitute recipe, a good alternative to tofu and tempeh and cost effective. The "steaks" will freeze indefinitely. The meat can be shaped variably such as into balls and is not limited to flat "steaks"

  • 80 ml (1/3 cup) maple syrup

Jiang You Zhan Jiang 醬油沾醬 (Soy Dipping Sauce)

Ingredients:

  • 3 tablespoons soy sauce
  • 1 teaspoon white rice wine vinegar
  • 1 teaspoon white sugar
  • 1/2 teaspoon chilli, chopped finely
  • 1 stalk scallion, chopped
  • 1 clove garlic, minced
  • Pinch pepper


Method:

  1. Mix the liquid dipping sauce ingredients in a bowl, making sure sugar is dissolved.
  2. Add the remaining ingredients and stir.

Notes:
For a variation, add a teaspoon of rice vinegar and/or a teaspoon of chili sauce. You can make up a larger quantity, and keep it in the fridge for several months.
