  • cabbage, 40 g (~5 leaves)
  • vegetable oil, 10 g (1 Tablespoon)
  • soy protein powder 50 g (2/3 cup). Soak with lukewarm water for 20 minutes. Pour off water.

Filipino 'croquetas' are made with mashed potatoes and chopped meat or fish, usually leftovers. They are presumably derived from the Spanish croqueta but without the bechamel style filling.

  • 3 large *potatoes, boiled and mashed
  • All purpose flour for coating
  • 1 egg beaten and 1 fresh egg
  • 1 tsp cilantro, chopped
  • ½ stalk green onion, finely diced.

  • a suitable number and type of potato, washed and thick chipped. (Recommended potatoes: Russet Burbank, Spunta, King Edward, Bintje or Sebago)

  • finely grated preferred cheese (Parmesan, Romano, Provolane, Mozzarella various Goat cheeses or crumbly NZ cheddars)

  • 480 gm (4 Cups) Whole-grain wheat flour
  • 2 Tablespoon Ghee/vegetable oil                              
  • 300 ml (1¼ Cup) Water

Cucumbers With Onion And Cheese

Ingredients:

  • 1/2 170g (~6 oz) seedless cucumber, cut into 2.5cm (1 in).
  • 1 110g (~4 oz) medium red onion, peeled and quartered.
  • 85g[~ 3 oz or 1/2 cup) crumbled farmer cheese or a low fat paneer [about 3 oz, 85g].
  • 1 15g (1/2 oz) medium, fresh green chillie, seeded and diced.
  • Salt and freshly ground black pepper.

Method:

  1. Chop the cucumber coarsely with the metal blade of a food processor, 4 to 5 pulses.
  2. Add the onion and chop finely, about 5 pulses.
  3. Combine in a bowl with the remaining ingredients.

  • 1/4 teaspoon Chinese Szechuan peppercorns

  • fresh ginger, peeled and cut into a 3/4-inch [2cm] cube

Ingredients:


•    8 cups (half gallon) milk
•    1/4 cup lemon Juice


Method:

1.    Mix lemon juice in half cup of hot water and put aside.
2.    Boil the milk in a heavy bottomed pan over medium heat, stirring occasionally, making sure not to burn milk.
3.    As the milk comes to a boil, add the lemon juice gradually and stir the milk gently. The curd will start separating             from the whey, turn off the heat.

  • 4 Potatoes
  • 80 ml (1/3 cup) of cheese, {Swiss, farmers or almost any kind of white cheese}
  • 60 ml (1/4 cup) of chopped red onions
  • 1 tbsp oil
  • 1 tsp salt
  • 1/2 tsp chilli powder (vary amount according to your preference)

Method:
  1. Cut potatoes into small pieces something approximating a standard "chip" from a classical British Fish & Chip shop.
