Paneer Pakora (Cheese fritters)

Ingredients:
  • Paneer (Indian curd cheese) – 450 gm (1 lb)
  • Besan – 2 cups
  • Cumin seeds – 1 tsp
  • Red chillie powder – 1 tsp
  • Turmeric powder – 1 tsp
  • Green chutney – 1 cup
  • Chaat masala– 1 tbsp
  • Water (added to the dry constituents, slowly, to make the batter)
  • Cooking oil
  • Salt

Method:
  1. Cut the paneer in 5 cm (2x2 in) square thin slices 0.5 cm (1/4 in).
  2. Prepare a batter by mixing flour, salt, red chili powder, turmeric and a pinch of baking soda in a bowl. Blend to create a thick batter.

Cheese Masala Rolls

Ingredients:
  • Puff Pastry Sheets – 1 pkg (1 pkg has 2 sheets) or preferably a light short pastry.
  • For the filling:
  • Paneer – 200gm (~7 oz), crumbled
  • Oil – 1 tbsp
  • Turmeric  Powder – 1/4 tsp
  • Red Chillii Powder – 1/4 tsp
  • Cumin  Powder – 1/4 tsp
  • Chat Masala – 1/2 tsp
  • Amchoor (Mango Powder) – 1/4 tsp
  • Salt – to taste
  • Cilantro – to taste, chopped
Method:
  1. Pull out a package of Puff Pastry Sheets to defrost on the counter for 40 minutes.
