  • 10 dried chillies (cut into 1cm slices, seeded and soaked in hot water to soften)
  • 5 red chillies (sliced)
  • 7 shallots.
  • 3 cloves garlic.
  • 1 tbsp ground fennel
  • 3 tbsp ground coriander
  • 200g chicken breast meat (cooked and shredded)
  • 750ml coconut milk (from 600g grated coconut and sufficient water) or pre-packaged cartons
  • Salt (to taste)
  • 5 eggs
  • 150g castor  sugar
  • 90g plain sifted (all purpose)...

Macanese Chicken (Galinha à Portuguêsa) 土生葡人的雞

  • 1.5 Kg (~3 1/2-lb.) Chicken, cut into 10 pieces
  • salt and freshly ground black pepper
  • 2 tbsp. cornstarch
  • 2 tbsp. vegetable oil
  • 3 medium russet potatoes, peeled and cut into chunks
  • 1 medium yellow onion, peeled and chopped
  • 1 piece ginger, peeled and sliced
  • 2 tsp. ground turmeric
  • 480 ml (2 cups) coconut milk
  • 1 lemon, thinly sliced

  1. Generously season Chicken with salt and pepper, then lightly coat with cornstarch. Set aside for 15 minutes.
