This is quite a remarkable ingredient. I think that it's probably only in the hmemade domain and it satisfies many purposes. As a super Soy Sauce this can't be beaten. It can be diluted down if it's too strong for a given purpose. It's also preservative and additive free.

This is a delicious as a side dish or as a sauce.Ingredients:- 500 ml (2 cups) fresh shiitake mushrooms and/or various mixed mushrooms sliced thickly 5 mm (1/4 in)
- 2 tbsp chicken or vegetable broth
- 1 tbsp minced fresh ginger
- 2 medium cloves garlic, chopped
- 240 ml (1 cup) coarsely chopped scallion
- 2 tbsp soy sauce
