Ingredients:
  • *kangkong (you can substitute many leafy greens)
  • 1 tablespoon sesame oil
  • 1/2 onion
  • 4 cloves garlic
  • 1 piece ginger
  • 1 chillie
  • 2 tablespoons water
  • 1 tablespoon sweet soy sauce (kecap manis)
  • sesame seed
  • basil leaves, fresh
Method:
  1. Wash, trim and drain kangkong.
  2. In a wok or skillet, heat a tablespoon sesame oil over medium-high heat.

Japanese Inari is a most convenient  product for wrapping all kinds of foods and a good alternative to nori for variety. Generally this is done with various sushi components but this can be exclusively vegetarian  by the use of vegetables and selected herbs. This Shan dish has a delightful sour edge with  a sour flavourant, tamarind extract, used for the purpose. There are local variations on presentation from serving as individual compressed balls of the rice mix or as a single layer on a plate. Ingredients:
  • 1 block yellow tofu [10 x 10 x 7.5 cm (4x4x3 in.)]
  • 12 garlic cloves
  • 3 Tbsp chopped coriander leaves
  • 2 Tbsp roasted sesame seeds
  • 90 ml (6 Tbsp) oil
  • 1 tsp or less chillie powder
  • 1 Tbsp soy sauce
  • 3 tablespoons vinegar
  • 11/2 Tbsp roasted gram flour
  • Salt to taste

There are many formulations of Chinese chillie sauces, some famous as regional specialties and many appear as commercial products in supermarkets. This particular recipe is very flavoursome and fairly safe compared to other homemade recipes which may not use vinegar in the recipe. There is some risk of botulism in those recipes but the use of vinegar reduces this effectively.

  • 60 ml (1/4 cup) soybean paste,
  • 1 Tbsp Kochujang (Korean hot pepper paste),
  • 1 tsp of honey (or sugar),
  • 1-2 tsp rice wine vinegar,
  • 2+ cloves of minced garlic,
  • 2 stalks of chopped green onions,
  • 1 Tbsp of sesame oil,

Tazukuri is sugar-coated dried sardines and a traditional Japanese New Year's dish




Ingredients:
  • 60 gm (2 oz.) dried sardines
  • 2 Tbsps sugar
  • 2 Tbsps soy sauce
  • 1/2 Tbsp mirin
  • 2 tsps white sesame seeds
Method:
  1. Put the dried sardines in a skillet and stir-fry for a few minutes on medium-low heat. Set aside.
  2. Put sugar, soysauce, and mirin in a skillet and put on medium heat. When it's thickened, add dried sardines.
  3. Stop the heat and stir well. Sprinkle sesame seeds. Spread it on a tray to cool.

Khai Paen literally means "skin of the stone". A green algae is collected in the streams in and about Luang Phrabang. This filamentous algae grows most prolifically in the dry season when the streams run clear.

Ingredients:
  • 60 ml (1/4 cup) toasted sesame seeds
  • 3 garlic clove(s) minced (1 Tbsp)
  • 1 Tbsp ginger, minced
  • 3 scallions, minced
  • 80 ml (1/3 cup) soy sauce
  • 3 Tbsp sugar or honey
  • 1 1/2 Tbsp sesame oil
  • 1 tsp hot red pepper flakes
  • 1/2 tsp black pepper
Method:
  1. Lightly toast the sesame seeds in a dry skillet over medium heat.
  2. Combine the sesame seeds and the remaining ingredients in a shallow bowl.

Ingredients:

  • 2 Chicken breast fillets
  • 2 garlic cloves
  • 2 spring onions
  • 1 red chillie
  • 1 egg
  • 1/2 teaspoon five-spice powder
  • 45 ml (3 Tbsp) plum sauce
  • 4 slices white bread, thick slices, preferably a few days old
  • 25 g (~1 oz) sesame seeds
  • 2 tablespoons vegetable oil, to shallow fry

Korean Dipping Sauce

Ingredients:

  • 2 tablespoons soy sauce, good stuff
  • 1 teaspoon toasted sesame oil
  • 1/2 teaspoon minced garlic
  • 1 dash Korean red pepper powder (kochu garu) or other chillie powder (optional)
  • 1 dash toasted sesame seeds (optional)
  • 1/2 tablespoon thinly sliced green onion


Method:

Combine ingredients and serve in a bowl as accompaniment to Chon (dumplings) or pan fried vegetables.

Kalbi (Short Ribs)

Ingredients:

  • 2250 gm (~5lbs) Short Ribs (thin cut)
  • 240 ml (1 cup) of sugar
  • 360 ml (1 ½ cups) of soy sauce
  • 1 teaspoon black pepper
  • 2 tablespoons baked sesame seeds
  • 240 ml (1 cup) chopped green onion
  • 120 ml (½ cup) chopped garlic
  • 1 teaspoon sesame oil
  • Cooked White Rice for Serving

   
Method:

Combine all ingredients and marinate short ribs for 2 + hours.
Place on a HOT bbq for about 3-4 minutes per side (to desired colour). Serve with white rice.

  • 60 ml (¼ cup) crushed toasted sesame seeds
  • 500 ml (~2 cups) bean sprouts
  • 1 tbsp. vegetable oil
  • 500 gm (~½ lb.) Ground beef
  • 250 gm (~½ lb.) Firm tofu, mashed
  • 1 tsp. minced garlic
  • 120 ml (½ cup) sliced green onion
  • 2 tbsp. soy sauce
  • 250 gm (~½ lb.) Wonton wrappers
  • 1400 ml (6 cups) beef broth
  • 500 ml (~2 cups) water
  • salt and pepper

FOR MEATBALLS


  • 500 ml (~2 cups) ground beef
  • 3 Tbsp soy sauce
  • 2 scallions, finely chopped
  • 3 garlic cloves, minced
  • 1 Tbsp sesame seed, toasted and crushed
  • 1/2 Tbsp sesame oil
  • fresh ground black pepper, to taste
  • all-purpose flour, for coating
  • 2 eggs, beaten
  • vegetable oil (for frying)


FOR SAUCE

Kongnamool moochim (Soy bean sprouts salad)

  • 250 m (~1/2 lb) soy bean sprouts*
  • 1tbsp soy sauce,
  • 30 ml (2 tbsp) sesame oil
  • 1 tbsp Korean chili powder
  • 2 tsp salt,
  • 1/2 tsp minced garlic
  • sesame seeds,
  • 240 ml (1 cup) water,
  • 1 tspn salt
    
(*bean sprouts are OK if you don't have soybean sprouts or if you prefer another.)
 

Method:

  1. Wash soy bean sprouts well. (take out the thin tail part if you prefer).
