Grilled Stuffed Tofu Pok with Rojak Sauce

This dish is related to Tau Kwa Pau but "a distant relative".



Ingredients
  • Tofu pok (available in Asian grocers)
  • Beansprouts
  • Cucumber, cut into thin sticks, but not as thin as julienned.
  • *Rojak sauce
  • Toasted sesame seeds and granulated peanuts
  • Fresh lime juice

*Rojak Sauce: commercial "Rojak Sambal" works very well
Or
Dilute some har gou (虾膏, thick black almost solid prawn paste) with warm water or stock and add some minced chilli or chilli powder till desired heat level reached. The har gou paste ...

Siomay Batagor (Fried Fish Tofu Dumplings)

First appeared in the 1980s in Bandung and is considered a recent Sundanese creation. This is served in one of two ways: (i) Fried and served in a broth or (ii) served with a peanut sauce.




Ingredients :
  • 500 g white fish meat, finely divided by pulverising or pureeing.
  • 2 Tbsp shallots chopped finely.
  • 1 Tbsp of garlic smashed and chopped.
  • 2 tsp white pepper.
  • 1 tsp chicken powder.
  • 3 Tbsp  sugar.
  • 3 tsp salt (can be replaced with 1 cube of beef stock powder).
  • 1 Tbsp sesame oil.

Tofu Salad

Ingredients:
  • 1 block yellow tofu [10 x 10 x 7.5 cm (4x4x3 in.)]
  • 12 garlic cloves
  • 3 Tbsp chopped coriander leaves
  • 2 Tbsp roasted sesame seeds
  • 90 ml (6 Tbsp) oil
  • 1 tsp or less chillie powder
  • 1 Tbsp soy sauce
  • 3 tablespoons vinegar
  • 11/2 Tbsp roasted gram flour
  • Salt to taste
Method:
  1. Slice half the tofu into strips 7.5 x 1 x 2.5 cm(3 x 1/2 x 1in) thick. Cut rest 5 cm (2-in) squares, 1 (1/2 in) thick.

Natto is a specific fermented soybean product. It is umami! A savoury product only recently tried by travellers to Japan. For many Japanese it is as common as Vegemite is for Australians and as familiar as Marmite is for Britons, New Zealanders and South Africans. It is an acquired taste for many and it is "a hate it or love it food". This recipe uses this food as an ingredient mixed with the freshness of scallion to produce a fried sandwich in Tofu.

Tofu in Oyster Sauce 蠔油豆腐

Ingredients:
  • 450g (1lb) firm bean curd (tofu)
  • 6-8 dried shiitake mushrooms
  • oil for deep-frying
  • 1 clove garlic, finely chopped
  • 1 Tbsp sesame oil
  • 1 tsp corn flour
  • 120ml (½ cup) vegetable stock, plus 1 Tbsp
  • 1 tsp Chinese light soy sauce
  • 2 tsp Chinese dark soy sauce
  • 2 tsp sugar
  • 3 Tbsp vegetarian  oyster sauce or vegetarian mushroom condiment.

  • 6 Tiger Lily buds
  • 60 ml (1/4 c.) dried black mushrooms
  • 120 ml (1/2 c.)good quality bamboo shoots, drained and slivered
  • 115 gm (1/4 lb.) boneless pork, slivered
  • 1 litre (4 c.) chicken broth
  • 1 tsp. salt
  • 1 tsp. ground white pepper
  • 3 tbsp. rice wine vinegar
  • 2 tbsp. cornstarch
  • 3 tbsp. cold water

Ingredients:
  • 1 tofu
  • salt
  • Seasoning
  • 2 Tbs of soy sauce
  • ½ tsp of chopped garlic
  • 1 tsp of ground red pepper
  • 1 tsp of sesame seeds
  • 1 tsp of chopped green onion
  • ½ tsp of sugar
Method:
  1. Boil water in a pot, and place whole tofu carefully. water does not have to completely cover tofu. Put a little amount of salt into the pot. .
  2. Wait until tofu is completely cooked, and take it out.
  3. Place tofu in a dish and carefully cut into desirable thickness with a knife..

Ingredients:
  • 5 pieces beancurds
  • 10 prawns, minced
  • 200g minced pork
  • 2 eggs
  • 2 tablespoons self-raising flour
  • chinese parsley & green onions
  • salt & pepper
  • Oil for frying

  2. Mash beancurds.

Bitter Gourd and Pork, Okinawa Style (Goya Chanpuru)

  •  one bitter gourd (Goya)
  •  250g (1/4 lb) pork back ribs
  •  two eggs
  •  1 pack of tofu
  •  1/2 pack of soybean sprout
  •  cooking liquor (Sake, Mirin, Hsao Xing or Dry Sherry)
  •  sesame oil
  •  soy source
  •  salt
  •  instant bouillon cube (or dried bonito powder)

  • 500 gm (~1 lb) cotton tofu (firm tofu)
  • 340 gm (3/4 lb) skinned and filleted chicken breast, finely chopped
  • 180 ml (3/4 cup) panko (bread crumb)

  • 4 shiitake mushrooms, sliced
  • 360 ml (1 1/2 cup) dashi soup stock
  • 3 Tbsp soy sauce

  • 200g fresh yellow noodles (scalded)

  • 600g pork (lean pork - cut into strips)
  • 1 pinch 5 spice powder
  • 1 tablespoon sugar
  • 1 tablespoon salt
  • 1 teaspoon cornflour
  • 1 teaspoon soya sauce
  • 1 egg yolk (separate white to use as paste for cover)
  • 3 pcs tauhu puay (soya skin - cut into 10cm x 14cm pieces)

  • 1 tbsp. vegetable oil

  • 1 pkt coarse rice vermicelli (or subst, Angelhair pasta)
