Ingredients:
 
550 g    Pork belly, with skin
3 cloves    Garlic, roughly chopped
6 stalks    Spring onions, roughly chopped
2 1/2 cm    Fresh root ginger, shredded
4 tbsp    Light soy sauce
2 tsp    White pepper


Method:

Cut pork into large pieces (approx. twice bite-size).
Put pork into a deep pot and add garlic, onion and ginger and cover with water.
Bring the pork to boil, then lower heat and allow to simmer for 2 - 2/12 hours. Add water if necessary.
(The pork, should now be very tender, and the skin reduced to a jelly-like consistency)
Lift the pork pieces out and cut into thin strips, and arrange in a serving platter.
Sprinkle with soy sauce and white pepper and serve.
