  • 500 gm (1 lb.) lobster
  • 2 shallots, thinly sliced
  • 2 red chilies, thinly sliced
  • 2 green chilies, thinly sliced
  • 1 lime, squeezed
  • salt and pepper to taste
  • Vegetable oil as needed


Cooking the Lobster


  1. Put 6 inches of water in a 12-14 quart pot. When cooking lobster, it is important to bring water to a full boil.
  2. Add 1/4 cup of salt and drop lobster in head-first.
  3. Bring water to a boil again, continue cooking lobster and then reduce heat to medium.
  4. Boil for 12 minutes only.
Cooking lobster by size: Boiling

  1. 500 gm (1 lb.) lobster - boil lobster for 12 minutes
  2. 750 gm (1.5 lb.) lobster - boil lobster for 15-18 minutes
  3. 1 kg (~2 lb) lobster - boil lobster for 10-22 minutes


  1. Using a 10qt. pot, add an inch of water and add salt. Place something with holes in the bottom of the pot so the lobster never actually sits in the water.
  2. Bring water to rapid boil, add the lobster.
  3. Cover pot. Steam for 10 minutes only.

Cooking lobster by size: Steaming

  • Under 2 lbs - cook lobster for 10-12 minutes
  • 2 lbs. and over - cook lobster for 15-20 minutes

After cooking lobster for recommended time shut off heat and let stand for 5 minutes.

  • Once the lobster is cooked, take the meat off and slice, set it aside.
  • Stir fry shallots, red chilies and green chilies with a little vegetable oil until fragrant, then put the meat in.
  • Keep stirring it lightly, then add lime juice, salt and pepper to taste.
  • Stir again until even, take out and it is ready to serve.
