• 1 litre Milk
  • 1 table spoon curd (yogurt)
  1. Heat the milk in a heavy sauce pan to 80oC (176oF).
  2. Allow it to cool down  to 40oC (105oF).
  3. In a cup take some of this warm milk and add the yoghurt and stir it well.
  4. Pour the prepared cup into the rest of the warm milk, stir and allow to sit undisturbed.
  5. Place it in a warm place  overnight or for 5-6 hours at least. During the setting period do not move the container at all.
  6. Once it is done transfer the container to refrigerator.
  7. You can alter the cream content for a preferred consistency by selecting milk blends of your preferred fat content
  8. Various flavour additions can be added after the yogurt is made.
  • The process depends on temperature. In colder weather it takes longer to form the yoghurt. You can place the mixture in a thick wrapping of cloth as  insulation to speed up the process during cooler weather.
